It is vitally important to have enough storage for your maple sap. A good rule of thumb is to have one gallon of storage for every tap. On days when you have a big run this may not be enough but since we don't know when those big runs will come, how long they will last or how much sap will be produced, we need a nice safe average. Sap should only be stored in food safe containers. Remember that sap is very susceptible to off flavor. Be sure the container that you store your sap in is free from odors. Storage tanks should be cleaned with hot water and a nylon scrub brush at least once a week or every time the tank is emptied. DO NOT USE DETERGENTS TO CLEAN SUGARHOUSE EQUIPMENT.
