Knowing when to tap your trees depends on:

1. How many trees you have to tap 
2. The weather conditions

You’ll need to watch the weather and wait for some freeze-thaw cycles: when it’s around 20 degrees at night and around 40 degrees during the day. That being said, if you have a large number of trees to tap, you should be done tapping trees by the time those freeze-thaw cycles happen.
